A Healthy, Mid-Morning Pick-Me-Up!

This recipe may be simple, but it's loaded with flavor!

Breakfast or lunch typically holds us over for a few hours, but after a while, we’re bound to hear that familiar grumbling sound. The easiest and quickest thing to do when hunger strikes is to eat a store-bought snack or stop by the vending machine. Unfortunately, many of these go-to, processed snacks are generally high in sugar, unhealthy fats, and carbohydrates. A healthy snack should contain a good balance of the main nutrients to keep you healthy and nourished. Who wouldn’t love a mid-morning snack of fruit with yogurt and a topping of crunchy homemade granola?

Homemade products represent a great advantage, since we know all the ingredients we are using in the recipe. Plus, we rid our meals of preservatives and artificial flavorings that are harmful to our health. No matter how you consume it, I assure you that you will love this berry nut granola and it will add a special and healthy touch to your sweet foods.

Make Crunchy Blueberry and Pecan Granola

This healthy granola recipe is a great snack or breakfast.

While your oven is preheating to 350º Fahrenheit, mix the oats, pecans, pumpkin seeds, and flax seeds with honey. Spread the mixture on a baking sheet lined with baking paper or wax paper. Bake the granola until the mixture is golden brown, this will take roughly 7 minutes depending on the power of your oven, but be sure to keep an eye on it.

Once the mixture has browned, remove the pan from the oven and let it cool to room temperature. Pour the oat and toasted seed mixture into a large bowl. Add in the dried blueberries and coconut chips and mix thoroughly until all of the ingredients are fully integrated.
